Sour Silesian soup (5-6L)
Ingredients:
- sourdough for sour soup - 1L
- parsley root - 300 g
- celery - 300 g
- carrots - 500 g
- onion - 600 g
- smoked ribs - 1 kg
- potatoes - 1 kg
- Silesian sausage - 500 g
- smoked bacon - 500 g
- 18% sour cream - 0.5 L
- water
- parsley - 1 bunch
- salt, pepper, allspice, bay leaf, lovage, marjoram
Cook a residue of ribs, carrots, celery, parsley. Cook the chopped potatoes separately. Dice onion, bacon and sausage and fry with onion. Drain the residue and cut the cooked vegetables into cubes. Peel the rib meat to the soup. Add sourdough to the residue and cook, add all sliced and fried ingredients. Finally, add boiled potatoes. Whiten the cream and season to taste.
