Bigos - Polish Hunter`s Stew (50 portions)

 

 Ingredients:

- white cabbage - 2 pcs
- sauerkraut - 4 kg
- carrots - 2 kg
- onion - 1 kg
- Silesian sausage - 2 kg
- smoked bacon - 1 kg
- neck - 1 kg
- dried plums - 500 g
- forest mushrooms - 500 g
- broth - 2 L
- oil - 0.5 L
- tomato concentrate - 0.5 kg
- dry red wine - 1 L
- salt, pepper, hot pepper, sweet pepper, bay leaf, allspice, juniper, thyme, marjoram.

Chop white and sauerkraut. Boil in a small amount of water in separate pots with bay leaf and allspice, salt. Grate carrots and add to sauerkraut, cut the onion and fry with mushrooms and bacon, add concentrate and fry. Dice the meat and sausage, fry, water with wine, season with herbs and stew until tender. Strain the excess of water from the cabbage and combine the ingredients, pour the broth over and stew, add plums and the rest of the spices.

The best flavour is the next day.
